Vienna: Süss oder Scharf?

A note from Kristian Meixner, Chef de Cuisine for Stephen STARR Events:

Carnegie Hall’s Vienna: City of Dreams festival pays tribute to of the art and culture of Vienna. I am so excited to have the opportunity to create and share Austrian inspired entrees and desserts in Citi Café during the festival. My grandfather and his family are from Austria, and I grew up eating traditional Austrian dishes, with several recipes handed down through my family.

Vienna is known for their Wieners, which are named after the city. So naturally, I will be serving one of my favorite foods, Bratwurst! Just like you would find at a Viennese Weiner stand on the streets, you simply would be asked if you prefer it “Sweet” (süss) or “Spicy” (scharf). This does not refer to the flavor of the sausage, but what style mustard you would like slathered on your brat. We will also be offering a Viennese staple called Knoedel. These are a handmade potato dumplings filled with smoked pork (speck), celery root, leeks and parsley. Last, we will be serving traditional Apple Strudel.

It is exciting for me to be preparing these classic dishes, because this is what I grew up eating and it is an honor to be able to share these delights with everyone who will be joining us here at Carnegie Hall while enjoying the wonderful performances.
